Babka (Sweet Bread)

1 c. Milk
2/3 stick Butter (room temperature)
1/2 c. Sugar
1-1/2 t. Salt
1 c. Golden Raisins

1 c. Water
4 c. Flour
1/2 t. Mace
2-1/2 t. SAF Instant Yeast
2 Eggs (room temperature)

Scald the milk in a pan (it's scalded when bubbles start to form around the edge). Remove from heat and add the butter. Stir until the butter melts completely. Add sugar and salt, stir well until dissolved and set aside to cool. Soften raisins by putting them into a large cup of hot water. After they are soft, drain but save the water. In a large bowl, add the flour, mace, raisins, and yeast. Mix well to distribute the raisins. Break one of the eggs into a bowl and beat well. Add some raisin water and cooled milk to the flour and mix with a heavy wooden spoon. Continue adding the liquid until you have a wet sponge consistancy to the dough. Cover with a damp cloth and put in the oven or a draft free place for the dough to rise (about 3 hrs). After it the first rising, punch down and split into two loaves. Put the dough into greased baking pans and cover to rise once more. Coat the tops with a beaten egg yolk. Bake at 350° for 30-40 minutes until golden brown.
