Cole Slaw

5 c. Cabbage
1 t. Salt
1/2 Green Pepper
1 Carrot
1/2 medium Onion

5 T. Sour Cream (optional)
10 T. Miracle Whip
4 T. Sugar
3 T. Vinegar (white)
dash Black Pepper

Shred cabbage to the size you like, although finely grated is what our family made.

Sprinkle salt over the cabbage and let sit for 1 hour. Squeeze out all the water the salt extracted and discard.

Add grated green pepper, carrot, onion and all other ingredients to the cabbage. Mix well. Can be eaten immediately, however, the flavors will blend better if the slaw is refrigerated for a day.
